Who Invented the Lamington Cake? There are many different stories.

First of all, it is discussed whether the Lamingtons were first made in Australia or New Zealand. The most popular story I’ve read on the subject mentioned Lord Lamington, who was British Governor of Queensland in the late 19th and early 20th centuries.

The story goes that his servant accidentally dropped a piece of cake into a bowl with chocolate icing. The Lord didn’t mind but suggested they also dip the square in shredded coconut so it doesn’t get too messy if eaten with hands.
