How are Pistachios Harvested?
The beloved pistachio is a nutritious nut with an irresistible flavour; the beloved pistachio is a seed kernel grown mainly from the Pistacia vera tree. This tree has several cultivars; but, the most common is the Kerman, from which the nuts are typically harvested. A member of the cashew family, Anacardiaceae, the pistachio tree, is native to Central Asia and Iran and grows in the dry, saline soil of the desert. As a desert plant, pistachio trees grow best in hot, dry climates and are harvested between late August and early October.
Growing your own pistachios seems like a dream come true; unfortunately, even in the right circumstances, it can take eight to ten years for the modern Pistacia vera to grow to the point of bearing its first harvest of edible nuts and fifteen to twenty years until it gives a full bearing. The inner shell of the pistachio is encased in a hull called the epicarp; when the pistachio is prepared for harvesting, the epicarp will separate easily from the inner shell and will change in colour from reddish-yellow to light yellow.
At the time of their harvesting, the pistachio trees are automatically shaken. The seeds that drop are then gathered in bins and transferred to a processing plant. The remaining epicarps are removed from the pistachio shells by a huller, and the pistachios are further sorted by size and dried to keep fresh. This entire process can be achieved in less than 24 hours.
Pistachio Allergy
If you have one tree nut allergy, you’re likely allergic to other tree nuts as well. Well, pistachio paste is made of pistachio nuts, so you should use them with caution if you have a nut allergy. Still, only about 25 to 40 per cent of people are allergic to both peanuts and tree nuts, according to Food Allergy Research & Education (FARE) [1].
For instance, if you are allergic to cashews, you might test positive for pistachio antibodies; however, consuming pistachios would not cause you any harm. Interestingly, some people with known pollen allergies test positive for nut antibodies, even though they’re not particularly allergic to nuts.

Pure Pistachio Paste FAQ
Can I use this paste for macaron pistachio ganache?
Yes, you can. However, the paste tends to be a little runny so it is harder to thicken.
Is it sweet or salted?
Not salted, Not Sweetened. There are No Added Sugars, additives or preservatives. It is Naturally Slightly sweet.
What’s the difference between the pistachio paste and butter?
Pistachio butter is a rich creamy spread, much like peanut butter. Our pistachio paste is 100% pure pistachio with no other additives like sugar or honey. Pistachio paste is a smooth, creamy mixture that is made through a unique milling process that creates this highly refined paste that is smoother than pistachio butter.
Can you bake with this?
Yes, One of Its Primary intended uses is for baking i.e. making pistachio madelines.
After the first use, do you store in fridge? If yes, what is the shelf life of an opened jar?
Once opened, the pistachio paste should be kept tightly covered and refrigerated until needed, this will help keep the beneficial Oils in the nut paste fresh for Longer. Pistachio paste can be stored at room temp in a cool dark place, but we do recommend storing it in the refrigerator to help maintain its freshness. I put mine in the fridge and it was still fine almost a year later.
