General information
Lemon is a hugely popular ingredient and used to flavour a wide range of dishes and recipes. Lemon extract brings you the tangy taste you get from fresh lemons but in a more potent, more concentrated liquid form. It is made from the essential oil of fresh lemon skin that’s mixed with alcohol as a preservative.
The main difference between lemon juice and lemon extract is the part of the fruit they come from. Lemon juice is made from the lemon flesh, whereas lemon extract comes from the skin, so the taste is different too.
Lemon Extract has a full and complex aroma and has a wide range of uses. It’s often used to flavour desserts, dressings, baked goods, pickles, or marinades.
Best way to use lemon extract
Lemon Extract is a potent flavouring and should be used in small amounts. Only a teaspoon or two is enough to add lemon flavour to a dish.
It’s an excellent substitute for lemon juice in desserts in which the lemon flavour is key. However, you may need to add additional liquid, as it’s highly concentrated. For instance, if a recipe calls for two tablespoons of lemon juice, substitute one tablespoon of lemon extract and one tablespoon of water.
You can use lemon extract in everything from popsicles, cookies, cakes and even beverages.
Storage
Keep the extract in a cool, dry area away from heat and direct light in an airtight sealed container. The shelf life is up to 2 years.
