Raw Hazelnuts – Whole with Skin | Food-Grade Quality for Professional Use
Ever wondered what gives Nutella its rich, nutty depth? The answer is hazelnuts — also known as filberts. These naturally brown-skinned kernels are packed with earthy flavour and an unmistakable crunch that makes them a key ingredient in premium chocolate spreads, pastries, and confections.
At Natural Moreish, we supply high-grade Raw Hazelnuts (with skin) — clean, chemical-free, and selected for performance in food production environments. Sourced for their consistency and flavour profile, these hazelnuts are ideal for roasting, grinding, or blending into spreads, pralines, or inclusions in baked goods.
General Information
Hazelnuts are the edible seeds of the hazel tree and are known for being one of the richest natural sources of vitamin E, which supports skin health, cognitive function, and reduces inflammation.
In their raw, unblanched form (with skin), hazelnuts offer a robust flavour — nutty, earthy, with subtle hints of cocoa and toast. Compounds such as filbertone (a natural ketone) and pyrazine contribute to the signature hazelnut aroma, described as warm, chocolatey, and slightly beany — enhancing their application in chocolate, bakery, and dairy formulations.
Serving & Industrial Use
In the Melbourne food industry, raw hazelnuts with skin are widely used for:
-
Roasting and caramelising in chocolate or confectionery lines
-
Nut butters and gianduja spreads (pre-grinding or roasting)
-
Inclusions in artisan baked goods (cookies, breads, biscotti, muffins)
-
Granola, trail mixes, and snack bars
-
Gelato and ice cream bases, where a more intense nut flavour is desired
Their natural skin adds mild bitterness and additional fibre — a benefit for chefs or product developers seeking balance in texture or nutritional profile. Many Melbourne-based artisan bakeries and dessert cafés value raw hazelnuts for the deeper profile they offer before roasting or processing.
Storage Guidelines
For best shelf life and flavour retention, store raw hazelnuts in an airtight container, away from light, moisture, and strong odours.
-
Ambient shelf life: up to 6 months
-
Refrigerated/frozen shelf life: up to 12 months
To maximise taste and aroma, roast just before use, or grind directly for production purposes.
Raw Hazelnuts FAQ
Do you have to bake hazelnuts/filberts before using them?
Absolutely not. They are wonderful raw. If you keep a portion frozen, they will taste as fresh as can be when you take them out.
Are these hazelnuts roasted, or raw or blanched?
They are raw.
Are these hazelnuts organic and gluten free?
Gluten free but not organic.
Do raw hazelnuts need to be cooked?
If you need to remove the skins you heat them and then rub them off. Roasting your hazelnuts before using them in a recipe, brings out the flavor. To do that, heat the oven to 350 degrees. Add the nuts, spread out on a cookie sheet. Turn OFF the oven. Leave nuts in for 15 minutes or until oven is cool. They will never over cook with this method.
How many servings of nuts per day is healthy?
The American Heart Association recommends eating four 1.5-ounce (about a handful) servings of unsalted, unoiled nuts per week, and the U.S. Food and Drug Administration says that eating 1.5 ounces of nuts per day may reduce the risk of heart disease.
