Ingredients

4 egg white
1 tsp white vinegar
1 tbsp cornstarch
1 cup sugar
1½ cup whiping cream
⅓ cup maple syrup
3 cup berries, your choice (strawberries, raspberries, blueberries, blackberries, etc.)

Instructions

Preheat the oven to 275 ° F (135 ° C).
Line a baking sheet with parchment paper. Using a 23 cm (9 in.) plate. Draw a circle with lead pencil. Turn the parchment paper.
In a mixing bowl, combine the egg whites and vinegar, then beat them with an electric mixer until stiff.
Sprinkle cornstarch and sugar over stiff eggs while beating. Once everything is well incorporated, continue beating for about 5 minutes. When the preparation turns into a very firm and shiny meringue, pour it onto the baking sheet. Spread the meringue into a circle about 23 cm (9 inches) in diameter and 2.5 cm (1 inch) thick.
Bake in the center of the oven for 1 hour and 15 minutes. Take out of the oven and let cool down.
In a large bowl, whip the cream with maple syrup.
Garnish the meringue with maple whipped cream and berries. Enjoy 🙂

Notes

When the meringue is topped with whipped cream and berries, it should be eaten quickly to keep its crunchiness. Before filling the meringue, it is possible to store it for a few days in a dry place to let it dry in the open air.
