  • 4 egg white
  • 1 tsp white vinegar
  • 1 tbsp cornstarch
  • 1 cup sugar
  • cup whiping cream
  • cup maple syrup
  • 3 cup berries, your choice (strawberries, raspberries, blueberries, blackberries, etc.)


  • Preheat the oven to 275 ° F (135 ° C).
  • Line a baking sheet with parchment paper. Using a 23 cm (9 in.) plate. Draw a circle with lead pencil. Turn the parchment paper.
  • In a mixing bowl, combine the egg whites and vinegar, then beat them with an electric mixer until stiff.
  • Sprinkle cornstarch and sugar over stiff eggs while beating. Once everything is well incorporated, continue beating for about 5 minutes. When the preparation turns into a very firm and shiny meringue, pour it onto the baking sheet. Spread the meringue into a circle about 23 cm (9 inches) in diameter and 2.5 cm (1 inch) thick.
  • Bake in the center of the oven for 1 hour and 15 minutes. Take out of the oven and let cool down.
  • In a large bowl, whip the cream with maple syrup.
  • Garnish the meringue with maple whipped cream and berries. Enjoy 🙂


When the meringue is topped with whipped cream and berries, it should be eaten quickly to keep its crunchiness. Before filling the meringue, it is possible to store it for a few days in a dry place to let it dry in the open air.
