General Information

Almond paste is an ingredient for baking that is used in cookies, cakes, tarts and other desserts. It’s made with almonds, sugar, a binding or thickening agent like corn syrup or glucose, and a natural flavouring agent like almond extract. Preservatives are sometimes used in commercially processed almond paste to extend its shelf life. Almond paste is gluten-free by itself.

Almond paste tastes just like almonds with a soft texture similar to a spread but it is not ready to use right out of the bag. Almond paste is often confused with Marzipan, they are very similar but the main difference between them is the sweetness and the amount of sugar and almonds in them. Almond paste contains less sugar and more ground almonds, on the other hand, Marzipan has fewer almonds and more sugar.

 

Best Ways to Use Almond Paste

Almond paste is used as a filling for Danish pastries and bear paws, and many countries have their own almond paste specialities, especially for Easter and Christmas baking. Such as:

  • Germany: The German equivalent of almond paste is used in a variety of Christmas cookies as well as “Stollen”, the famous yeasted holiday bread.
  • Italy: Almond paste (pasta di mandorle) is used to make pignoli, chewy cookies with pine nuts on top, in Italy.
  • France: Almond paste (pâte d’amande) is used in a variety of forms in France, including almond-filled croissants. Another seasonal speciality made with almond paste is galette des rois, or king cake, which is made every year for Epiphany in January.

Storage

To keep the almond paste from drying out, it should  be stored in an airtight container in a cool dry place and away from direct sunlight. The best option would be to store it in the fridge.
