How Dates are harvested

Most dates are harvested at the fully-ripe “Rutab” (light-brown and soft) and “Tamar” (dark brown and soft, semidry, or dry) grades, when they have much higher levels of sugars, lower contents of moisture and tannins, and are softer than the “Khalal” stage dates. Moisture contents of Khalil, Rutab, and Tamar dates range from 45-65, 30- 45, and <30%, respectively.

You can store date syrup in the refrigerator for several weeks. Date syrups can also be stored in the freezer.

Our date syrup is generated from 100% natural date, which is cleaned & pitted, pieces are extruded through a series of exemplary screen. The paste possesses a sweet smell and flavor, free from dry, musty, earthy and other unwanted off-flavors. No anti-oxidants, additives, sulfate agent, or artificial flavor are used.

Date fruits pass through the process of separation of calyx and seeds, washing, drying, moisturizing, polishing, pressing, cooling, grading, and packing. These are the significant production steps. Our Date syrup is made in a way that all nutrients and qualities in the dates are maintained.

Allergy is a reaction by your immune system to something that does not trouble other people (an unusual immune response to the proteins found in vegetables and fruit). People who have allergies are usually sensitive to more than one item.

Date Syrup FAQ

Are there any other ingredients other than dates?

100% dates. No water, no additives.

I’m going to be making granola bars, could I use this replace the honey? Or should I still use the honey to act like a glue because they are no bake.

That would be a great way to try date syrup! While date syrup is sticky, it may not hold your bars together exactly like honey. It also depends on the other ingredients that are in your bars as far as how they will work together to hold together! Don’t be surprised when it likely makes your bars a pinkish color.

How is the product made? Where does the fiber go?

The date syrup is pressed and filtered so that the skin is strained out of the end product. It still retains magnesium, potassium, antioxidants and other trace minerals. Our date syrup, however, is made with the whole date, including the fiber.

How many carbs per serving, and what is a serving?

13 carbs in one serving of 1 Tablespoon.

I would like to bake with this product. Is there a chart to show the comparable amount in exchange for sugar?

For baking, you need to use less date syrup when replacing granulated sugar — a ratio of 2/3 cup date syrup for every 1 cup of sugar — and less liquid in the recipe.

It’s only made of dates, there is no caffeine in dates.

Are the dates fresh or dried?

The answer is both. The dates are fresh off the trees, naturally dried on the trees by the sun. In other words, we do not further dry the dates before turning them into syrup.

Is this product unsulfured?

Yes, we do not treat with or add sulfur to our date syrup.
