The peeled kernel is regarded as the best and most expensive variety of pistachio. This quality is obtained by picking pistachios before they become fully ripe so that the green colour of the kernel does not turn yellowish. These pistachios are sun-dried and shelled (cooked air drying is not permitted). The nuts are steeped in boiling water first before the loosened grain coat is removed mechanically.

General Information

Pistachios are the seeds of a tree in the cashew family, also called the pistachio tree. They are protected in a hard shell and usually have a length of one inch and a diameter of half an inch. The pistachio kernels are naturally found in different colours, ranging from yellow to shades of green. According to archaeological studies, people have a long history of eating them that goes back as early as 6750 BC. It is widely accepted that the pistachio tree is native to central and western regions of Asia.

There are seven categories of green peeled pistachio kernels available (GPPK). The density of the green colour in the kernel is used to classify the grades. Greener kernels are those that are more expensive. It goes from darkest to lightest, starting with S and ending with A, B, C, D, F, and H. (dark green, green, greenish, light green, and yellowish). The last two grades are split. H stands for light green or yellowish splits, whereas F stands for dark green splits.
