Who Invented the Lamington Cake? There are many different stories.

First of all, it is discussed whether the Lamingtons were first made in Australia or New Zealand. The most popular story I’ve read on the subject mentioned Lord Lamington, who was British Governor of Queensland in the late 19th and early 20th centuries.

The story goes that his servant accidentally dropped a piece of cake into a bowl with chocolate icing. The Lord didn’t mind but suggested they also dip the square in shredded coconut so it doesn’t get too messy if eaten with hands.

However, while the story is fun to read, the main thing remains that the modern recipe comes from either New Zealand or Australia is one of the most popular foods these countries have to offer.

Ingredients

300 g dark chocolate
60 g soft butter
6 egg
60 g shredded coconuts
200 g sugar
250 g plain flour

Instructions

Preheat the oven to 180 ° C. Whisk the eggs with the sugar with an electric whisk for 5 minutes until the mixture whitens and doubles in volume. Add flour and mix well.
Add the butter. Pour into non-Stick 6 cup lamington pan and cook for 10-15 minutes. Take out of the oven and let cool.
Melt the chocolate, pass each cake inside and then pass them through the coconut. Place on a rack and let dry (well, you have to be able to do it, have the strength to let the chocolate harden!) Enjoy …
