  • 0.5 teaspoon saffron
  • 2 teaspoons grated orange zest
  • 0.5 cinnamon stick
  • 1 half vanilla bean
  • 1 cup water
  • 1 cup white wine
  • 1 cup sugar
  • 6 pears


  1. Blend water, wine and sugar, in a saucepan Simmer for 3 to 4 minutes and add the rest of ingredients, except pear and stay until the sugar is dissolved.
  2. Meanwhile, peel the pears, leaving the stems intact. Add to the saucepan, cover, then simmer until the pears begin to take on a glazed appearance, about 1.5hours.
  3. Close to serving time, remove the pears and reduce the syrup for 20 minutes or until it is almost toffee-like. Pour the syrup over the pears and serve with crisp sweet biscuits on the side.
