Cashews are never sold in the shell because the shells contain a poisonous chemical that must be removed before consumption. Once shelled, the kernels are 100% safe to consume.

Storage
It is best to process your nuts just before use. However, if you’d like to have cashews ready for adding your dishes, only roast raw kernels, dice, and freeze in an airtight container apart from foods with strong odours. They will keep for over a year in the freezer, and you can get the amount you need, bring them to room temperature and use them immediately.
