General Information
Pistachio appeared in the thirteenth century in the form of “pistace”. It comes from the Latin “pistacium” which borrowed it from the Greek “pistakiosqui”, and from the Persian “pistah” which means “nut”.
Pistachio is the seed of the pistachio tree. It is native to Syria and cultivated in Iran, Iraq, Tunisia and Sicily. Oval in shape, it is surrounded by a thin film slightly purple-red, then by a shell that comes off easily in two. Its colour is pale green (pistachio green!).
Pistachio can be eaten raw or roasted, salted or not. In some countries (e.g. Turkey), it is consumed as a paste made from oil, sugar and pistachios. Like many nuts and oilseeds, pistachios contain an appreciable amount of protein and provide a good supply of unsaturated fatty acids. It also contains a multitude of vitamins and minerals.
