Baileys gingerbread martini

Made with whipped cream,vodka and Baileys Irish cream liqueur, and topped with gingerbread men, this wonderful Christmas cocktail is just what the adults ordered.

Ingredients
  

  • 4 ounces Baileys Irish cream liqueur
  • 4 ounces vodka
  • 2 ounces Coffee liqueur
  • 2 ounces Gingerbread Syrup recipe follows
  • 2 scoops vanilla ice-cream, softened whipped cream
  • some gingerbread cookies

Gingerbread Syrup

  • 1 cup sugar
  • 1 cup water
  • 5 cloves
  • 2 cinnamon sticks
  • 1 fresh ginger

Instructions
 

  • In a cocktail shaker, combine the Irish cream liqueur, vodka, coffee liqueur, Gingerbread Syrup, and ice cream. Shake well with ice. Pour into four martini glasses that have been cooled. Finish with a big dollop of whipped cream and a dusting of gingerbread biscuit crumbs on top of each.
  • In a small saucepan, combine the sugar, water, cloves, cinnamon, and ginger. Bring to a boil over moderate heat, stirring constantly, until the sugar is completely dissolved. Reduce the heat to low and continue to cook for 5 minutes. Remove from the fire and set aside for 20 minutes to cool to room temperature before using. Refrigerate for up to 2 weeks, covered.
