“Cracked Black Pepper” refers to black pepper that has been roughly ground. Black pepper that has been pre-ground is often referred to as ground black pepper. Peppercorns and black peppercorns are derived from the same dried drupe; they start with identical qualities.
Crushed black pepper causes a warm rush of heat that starts from the back of the throat and moves up to the mid-chest. Peppercorns contain pipevine, an aromatic chemical component present throughout the body and outside of the peppercorn. Piperine and a volatile oil concentration of roughly 1-2.5 per cent by weight are responsible for the aroma, spicy and lemony with floral overtones around the edge.
