The process of oxidation results in the darkening of green tea leaves. The oxidation of green tea is not permitted. Black tea, on the other hand, is left to oxidize until it is fully black.

Since oolong tea is partially between the two, it is partly oxidized. The colour and distinctive flavour of the oolong tea is due to this partial oxidation, which varies between brands and can range from green to dark brown.
