The cinnamon stick is one of the most popular and fragrant spices in the world, which is used in various cultures around the world. Made from cassia bark, these sticks have a classic, familiar cinnamon flavour, and you can pair them well with cardamom and nutmeg. The bark of the tree contains an essential oil that is mainly responsible for the cinnamon flavour and aroma called cinnamaldehyde. It is often ground into a powder and used as a spice in cooking. Alternatively, the bark may be rolled into cinnamon sticks.

There are two main types of cinnamon:
1. Ceylon Cinnamon
2. Cassia Cinnamon
The two cinnamon types differ in terms of colour, shape, taste and aroma. Cassia Cinnamon is darker in colour with thicker sticks than Ceylon Cinnamon. It has a more powerful aroma than the Ceylon variety. As Cassia Cinnamon is widely cultivated in Asia, it is readily available in supermarkets around the world and therefore, it is much cheaper than Ceylon Cinnamon.

You can break up a cinnamon stick to infuse a pot of coffee or tea. Also, a few cinnamon sticks will flavour your broth or your curry fried rice.

Serving and Portion Size
Like all spices, Cassia Cinnamon should be used in moderation. The daily suggested serving size of cinnamon for healthy adults is no more than a teaspoon. In addition, it is strongly recommended that cinnamon should not be taken with antibiotics because it doubles the effect of antibiotics and may cause disorders. People with allergies to cinnamon should avoid consuming it and replace it with other spices. Finally, excessive cinnamon consumption is dangerous for heart patients because it increases the heart rate.
Storage
Similar to other spices, it is recommended to store cinnamon in containers that can be tightly sealed and in a dry place away from humidity and away from sunlight. This way, the aroma and taste of cinnamon will be preserved for a longer time. It should be noted that Ground Cassia Cinnamon tends to lose some of its flavours over time. Meanwhile, Cassia Cinnamon Sticks retains its flavour for almost a year.
