Made from cassia bark, these sticks have a classic, familiar cinnamon flavour, and you can pair them well with cardamom and nutmeg. The bark of the tree contains an essential oil that is mainly responsible for the cinnamon flavour and aroma called cinnamaldehyde. It is often ground into a powder and used as a spice in cooking. Alternatively, the bark may be rolled into cinnamon sticks.

There are two main types of cinnamon:
1. Ceylon Cinnamon
2. Cassia Cinnamon

It has a more powerful aroma than the Ceylon variety.
