The peeled kernel is considered the best and most costly pistachio kind. Harvesting pistachios achieve this quality before they are fully mature, preventing the green colour of the kernel from becoming yellowish. Pistachios that have been sun-dried and shelled (cooked air drying is not permitted). The nuts are first soaked in boiling water before the loose grain coat is manually removed.
General Information
Pistachios are the seeds of a tree in the cashew family, also called the pistachio tree. They are protected in a hard shell and usually have a length of one inch and a diameter of half an inch. The pistachio kernels are naturally found in different colours, ranging from yellow to shades of green. According to archaeological studies, people have a long history of eating them that goes back as early as 6750 BC. It is widely accepted that the pistachio tree is native to central and western regions of Asia.
Green peeled pistachio kernels are available in seven different varieties (GPPK). The classes are divided by the density of the green colour in the kernel. The more costly kernels are greener. Starting with S and finishing with A, B, C, D, F, and H, it goes from darkest to lightest (dark green, green, greenish, light green, and yellowish). The final two grades are split. F stands for dark green splits, whereas H stands for light green or yellowish splits.
These are grade D pistachio kernels, which are somewhat brighter than grade A but darker than grade C. They’re ideal for everything you choose to do with them, from eating directly out of the pocket to decorating pastries.
