Roasted Asparagus Bacon crisps and Pine nuts

  • Place the smoked bacon slices on a baking sheet covered with parchment paper or a silicone sheet. Bake for 15 minutes at 180 °. Turn the slices halfway through cooking.
  • Grab the slices of smoked bacon and place them on absorbent paper to remove excess oil.
  • Wash your asparagus then break the woody part at their base. Cut them in half lengthwise.
  • Place your asparagus on a baking sheet covered with a silicone sheet or baking paper. Coat them with olive oil, salt and pepper them. Bake at 220 ° C for 10 minutes.
  • Brown your pine nuts in a non-stick pan without oil over very high heat, stirring constantly.
  • Make parmesan shavings.
  • Divide your roasted asparagus among 2 plates. Wrap them with slices of smoked bacon, garnish with parmesan shavings and pine nuts. Decorate the whole with a few coriander leaves.

Notes

You can replace the coriander with small basil leaves.
